What do you love to make during the Summer for lunch or dinner? When it is very warm and hot outside, you don’t want to turn on the oven and get the house very warm. I either try to make something that requires only cooking on the stove or no heating at all.
One thing that is perfect on a warm, hot day is a salad. What I love about salads are there are many different possibilities for the type of salad you can make. I love making salads with spinach, romaine lettuce, or carrots. And the toppings on the salads can be anything you want. You can load your salad up with lots or vegetables or even fruit. Whatever your heart desires. As far as meat, deli meat or chicken tastes great. If I’m making a side salad with a meal, I skip the meat.
My husband and I recently bought some fresh mozzarella and bunch of Italian meat for a snack. I thought I would use some of the mozzarella and put it in a salad. I’ve come up with two variations of salad with fresh mozzarella. If you don’t have fresh mozzarella, you can use regular mozzarella instead. The salads with still taste just as great.
Here are my recipes for the salads with fresh mozzarella.
Italian Salad with Fresh Mozzarella
Serving size: 2
Ingredients:
3 cups spinach
6 slices of ham deli meat, chopped
3 slices of fresh mozzarella, chopped
1 carrot, julienne
1 cup tomatoes, diced
14 green olives, sliced
zesty Italian dressing
Directions:
1. Place all ingredients in big mixing bowl; mix.
2. Divide salad into two bowls.
Chicken Fruit Salad with Fresh Mozzarella
Serving size: 2
Ingredients:
3 cups spinach
1 chicken breast, sliced
3 slices of fresh mozzarella, chopped
6 strawberries, sliced
10 pieces of pineapple, sliced
20 almonds, whole or sliced
raspberry vinaigrette dressing
Directions:
1. Cook chicken breast in pan until done; let cool.
2. Place all ingredients in big mixing bowl; mix.
3. Divide salad into two bowls.
