Sweet Pepper Nachos

Who loves nachos? What are your favorite kind?

I am a big fan of nachos – any type of Mexican actually. When I was pregnant with my girls, nachos were one of the foods I craved.

One of my favorite nachos are sweet pepper nachos. You can bake them in your oven or in a toaster oven. I either use halved sweet peppers or thick sliced peppers.

You can make these sweet pepper nachos as a snack or a meal. They taste great with ground pork, shredded cheddar cheese, and your favorite nacho toppings.

Below is my recipe for sweet pepper nachos.

Sweet Pepper Nachos

Oven: 425 degrees

Total time: 20 minutes

Ingredients:

  • 12 sweet peppers, halved (or 3 peppers, cut in 1/2 inch slices)
  • 2 TBSP olive oil
  • sprinkle cumin, chili powder, garlic powder
  • salt and pepper to taste
  • 1 TBSP coconut oil (or olive oil)
  • 1/4 onion, diced
  • 1 lb ground pork
  • sprinkle cumin, chili powder, garlic powder, paprika
  • salt and pepper to taste
  • cheddar cheese, shredded
  • 6 cherry tomatoes, quartered
  • 1/2 avocado, diced
  • sour cream (or plain Greek yogurt)
  • salsa
  • taco sauce (opt)

Directions:

  1. Preheat oven to 425 degrees.
  2. Place pepper slices into a mixing bowl.
  3. Add olive oil, cumin, chili powder, garlic powder, salt, and pepper; mix.
  4. Place peppers on baking pan (or toaster oven with tin foil); bake for 10 minutes.
  5. While the peppers are baking, prepare the ground pork.
  6. Add coconut oil to pan; melt.
  7. Cook onions for several minutes.
  8. Add ground pork; cook until done.
  9. Add cumin, chili powder, garlic powder, paprika, salt, and pepper.
  10. Flip peppers and bake for 5 more minutes.
  11. Once the peppers are done, assemble the peppers closer together and overlapping.
  12. Add the ground pork on top of the peppers.
  13. Sprinkle with cheddar cheese.
  14. Place pan back in oven and bake for 5 minutes until cheese is melted.
  15. Divide the sweet pepper nachos between two plates.
  16. Add favorite nacho toppings such as tomatoes, avocado, etc.
